How does milk defy gravity with the fat not separating from the water?

The answer is brownian motion which keeps the particles suspended. Milk is a mechanical mixture and not a solution.

Most scientists do not see milk as a nano technology device. In fact milk is nano technology that we look past and take for granted. The fact that gravity can be defied in milk shows that at microscopic levels, brownian motion defeats gravity and keeps heavy particles (water) mixed with light particles (milk fat) without them separating.
